This was not our first choice, but we are glad we ended up here. You see, our reservationists, Yuko at the Bellagio mentioned the restaurant Switch at the new Encore. We got there and long story short we were denied!! Proper attire required. Chino’s and a Nike colored shirt does not cut it!! So we were, well I was so sad. I mean anyone who is denied must feel a sense of unworthiness. Anyway, feeling badly rejected, we didn’t even venture to see what Enore had to offer. Back to the Palazzo and ate at Cut.
Steak lovers this is one not to miss!! The food was absolutely to die for. If you have never tasted Wagyu and are in the mood to dish a little moola, this is the place to splurge. Compliments of the chef, we were offered these cute little cheese breads, very delicious. Cheese breadsticks and a choice of pretzel, focaccia or pumpernickel bread were served before dinner. A little lesson in the cuts of meat (Morton style) helped decided what was for dinner. Passed on appetizers this was a good thing, the Waygu, although only 8 oz. was very filling. When the waiter said that the wagyu melts in your mouth, it literally does!! We ordered a sampler and an 8oz Wagyu. The sampler included an American corn fed Kobe, Japanese Kobe, and the crème de la crème of Kobe, Japanese imported Wagyu. Compared to the other two pieces, I quickly snubbed the American Kobe because of its dryness. FYI, the waiter will recommend you order your steaks medium rare, which I was hesitant to do, but it was perfect. Desert was a chocolate soufflé and cappuccino. If you are too stuffed to order desert, then worry not, you’ll actually receive a mini dish of brownies and some kind of lemon bar with your check.The brownies were yummy. Overall, this was a wonderful dinner and I think it should become a tradition.
